Chocolate Chip Cream Cheese Bars

Every once in a while the ole' sweet tooth gets the best of us at our house, so I start looking for a bar or cookie recipe. One of my church cookbooks has several good recipes where I can always find something good to bake.

Recently I was asked to bring a pan of bars for the fish fry at our church. I would like to share this recipe this week. This is definitely a "keeper" recipe for me.

Chocolate Chip Cream Cheese Bars

1 pkg chocolate fudge cake mix 2 eggs
1/3 c. vegetable oil 1 c. chocolate chips
1 (8 oz.) pkg. cream cheese, softened 1/3 c.sugar

Mix dry cake mix,1 egg and vegetable oil until crumbly. Reserve 1 cup for topping. Pat remaining crumb mixture into ungreased 9 x13x 2 inch baking pan. Bake for 15 minutes at 350 degrees. Beat cream cheese, sugar and remaining egg until light and smooth. Stir in chocolate chips. Spread over baked and slightly cooled layer. Sprinkle with reserved crumb mixture. Bake 15 minutes longer. Cool before cutting.

I am going to share a quick tip in this column occasionally. TIP: Did you know that apples cause other fruit and vegetables to ripen faster? Keep your apples in a separate place in the fridge if possible.

Got a recipe or tip that you would like to share? Easter is just around the corner. Perhaps you have a favorite that you would like to email me.  My email is egeoffice.map@gmail.com or drop it off at the office at 304 West Broadway. Have a wonderful week!
