With Easter fast approaching, many of us like to decorate eggs with our children and grandchildren. I found a method that I tried and it made the eggs peel so nicely. For those of you who dislike a hard boiled egg that does not peel easily, please give this a try!
Place your eggs into a pot. Pour cold water into the pot making sure every egg is covered with one inch of water. Heat until water in a pot is boiling, then turn off the stove, and cover the pot with a lid. Leave covered for 15-17 minutes. Once time is up, put eggs in a bowl with cold water into the bowl and sit for 10 minutes. Eggs are done and can be placed in the refrigerator to cool further. Decorate your eggs for Easter or simply eat them. Eggs are a great source of protein.
A good friend and past co-worker shared a recipe with me and I would like to share it with you. With the unpredictable weather we have been having lately, it certainly puts me into the mood for baking. These sound wonderful.
Disappearing Marshmallow Bars
6 oz. butterscotch chips
1/2 c margarine or butter
1 1/2 c. flour
2/3 c. brown sugar
2 eggs
2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
2 c. mini marshmallows
1(12 oz.) pkg. chocolate chips
1/2 c. chopped nuts
Mix butterscotch chips and margarine in a saucepan, stirring constantly. Cool to lukewarm. Mix flour, brown sugar, eggs, baking powder, salt and vanilla. Add this to the butterscotch mixture and mix well. Fold in marshmallows, chocolate chips and nuts. Spread in a greased 9" x 13" pan. Bake at 350 degrees for 25 minutes. Don't overbake. Center will be soft, but becomes firm upon cooling.
