Hometown Cookin’ Favorites: Pudding Coffee Cake, Hawaiian Meatballs

Our spring has turned into one of the coldest, wettest and windiest in over 50 years, I have read. I believe it. It also is hard to keep your spirits up when we have so many gloomy days. One way to overcome it somewhat, is to keep your mind busy with doing other things that you enjoy. Perhaps cooking or baking could be one of those things.

I would like to share a couple of recipes that a friend sent to me that I hope you will try and enjoy.

Pudding Coffee Cake

CAKE

  • 1 box yellow cake mix
  • 1 pkg. instant vanilla pudding
  • 3/4 c. vegetable oil
  • 3/4 c. water
  • 4 eggs
  • 1 tsp. vanilla

NUT MIXTURE

  • 1/4 c.sugar
  • 1 tsp.cinnamon
  • 1/2 c. nuts

GLAZE MIXTURE

  • 1 c. powdered sugar
  • 3 Tbsp. milk
  • 1 tsp. vanilla

Mix ingredients together- cake mix, pudding mix, vegetable oil and water. Add eggs one at a time, beating a total of 8 minutes. Add vanilla when done beating. Place half of the nut mixture in the bottom of the bundt pan, half of the batter then rest of the nut mixture, and the rest of the batter. Bake at 350 degrees for 35-40 minutes. Top with glaze.

Hawaiian Meatballs

MEATBALLS

  • 1 sm can crushed pineapple (drain and reserve 1/3 c. juice)
  • 1/4 tsp. salt
  • 1/8 tsp. ground cloves
  • 1/8 tsp. allspice 1 # ground turkey or beef 1 egg 2 slices bread crumbs, crumbled 1 Tbsp instant minced onions
  • SAUCE 1/3 c. pineapple juice 1/3 c brown sugar 1/2 c. ketchup

Mix all ingredients except sauce ingredients. Shape into meatballs and place into flat baking dish. Cover and microwave on high for 6 minutes or bake for 1/2 hour. Drain. Stir sauce ingredients together and pour over browned meatballs. Cover and bake 1/2 hour at 350 degrees or microwave 5 minutes, or until meat is fully cooked. Yields: about 24.
