Hometown Cookin’ Favorites: Strawberry and Pie Filling Salads

With several school events recently happening for our grandchildren, we have been on the run. My husband and I have 11 grandchildren and 2 great grandsons. We love to watch them with their softball, soccer, music and band programs, and recently 2 prom Grand Marches . We know how fast they grow up and it is fun to be there in the process and to show our support.

It has always been good to have a plan when it comes to food and to have some of the supplies on your shelf for those times when you don't know that you will need to prepare a meal on the fly and don't have time to run to the store. I have to let it roll when my husband says, "Why do you have our pantry always so full." It is nice for that very reason to be prepared. 🙂

A couple of salads that I have made on occasion are called Pie Filling Salad and Strawberry Salad. Both of these recipes work good as a salad but also could be a dessert if you like.

Pie Filling Salad

  • 1 can cherry pie filling
  • 1 can sweetened condensed milk
  • 1 tall can crushed pineapple, drained
  • 1/2 package mini marshmallows
  • 8 ounces Cool Whip

Mix all of the above together. Refrigerate 6-8 hours before serving. and another that is good is:

Strawberry Salad

  • 2 pkgs strawberry jello
  • 2 cups hot water
  • 2 sm pkgs frozen strawberries
  • 1 sm can crushed pineapple
  • 2 bananas, mashed

Dissolve jello in hot water. Add frozen strawberries, pineapple and bananas. Chill. When firm then spread 1 carton Cool Whip on top. Put in a 9" x 13" pan.

I hope you enjoy and have a nice week!
