I hope that you are all staying inside on these hot humid days, or as much as you can! This week I would like to include a couple of recipes where you don’t have to turn on the oven to make your house even more warm.
My daughter for many years requested these bars every Christmas and they are easy to make. They’re simply called “No Bake Chocolate Cookies” and the recipe is as follows.
No Bake Chocolate Cookies
1 stick margarine
2 oz. semi-sweet chocolate
1 c. sugar
1/4 c milk
1 tsp. cocoa
1 tsp. vanilla
1 3/4 c. oatmeal
1/2 c coconut (optional)
1/4 tsp. salt
Melt margarine and chocolate together. Add cocoa, sugar, milk and salt. Cook at rolling boil for 2 minutes, stirring constantly. Remove from heat, add vanilla. Add Coconut and oatmeal. Mix well. Drop by tablespoonfuls onto waxed paper. Let cool. Enjoy!
No baking and heating up your house for the following dessert as well. It might not be a low calorie recipe but good, just the same!
Buster Bar Dessert
Crush 1 regular size package Oreo cookies and mix with 1/2 cup margarine. Pat into bottom of a 9 x 13″ pan. Soften 1/2 gallon vanilla ice cream and spread over cookies. Sprinkle with salted peanuts. Place in freezer for several hours.
Mix:
2c. powdered sugar
2/3 c. chocolate chips
1/2 c. margarine
1 lg. can evaporated milk
Combine in a saucepan until chips melt. Bring to a boil and simmer for 10 minutes. Cool thoroughly. Pour over dessert and freeze.
So take your pick, you chocolate lovers, have some good dessert on these hot, lazy days of summer.
Cooking tip: Next time you are cooking pasta, remember to salt the water you’re boiling pasta in. It does more than give it flavor. Adding salt to water raises its boiling point, meaning it boils your food at a higher temperature, thus shaving off time in the kitchen. Have a great week.
