Hometown Cookin’ Favorites: Calico Beans and Rhubarb Dessert

Summer time calls for different types of dishes. For example, I think soups are for winter and cold weather. Calico beans works well for a family picnic, or dish when you are having company over or maybe just grilling out and you need a side dish.

I know that there are a lot of different recipes for calico beans and I would like to share a recipe that I have tried. If you have a different version, I invite you to email me the recipe as I am always open to trying something different.

Calico Beans

1/4 lb. bacon, chopped and diced
1 lb.hamburger
1/2 c. chopped onion
1/4 c. brown sugar
1/2 c. ketchup
2 T. vinegar
1 T dry mustard
1 can butter beans, drained
1 can kidney beans, drained
1 can pork and beans, drained

Cook the bacon until done. Cook hamburger and onion. Drain the grease from the hamburger. Add all ingredients together. Bake at 350 degrees for 45 minutes or heat thoroughly in a crock pot.

If you are lucky enough to have a rhubarb patch near your home, here is a recipe that is a good and easy one to try. I’m only sorry to say that I do not have a rhubarb patch,

Rhubarb Dessert

4 c. rhubarb, chopped
1 c. sugar
1 c. water
1 package strawberry jello
2 c white cake mix
1/2 c. melted butter

Layer in a 9 x 13 inch pan. The last layer is the whole white cake mix sprinkled over the other ingredients. Drizzle the butter over the dry cake mix. Bake for 1 hour at 350 degrees. Serve warm with whipped cream.

Tip of the Week: Use a coffee filter to clean windows and mirrors. It works great because they are lint free. Another handy use besides using for your morning brew, is to use them over your left overs that you warm in the microwave. Simply place over food before heating. No more messy microwaves to clean!
